Keep knives sharp longer

After cutting things up on a cutting board, many people will then take the knife used for cutting and use it to scrap the cut food into the pan or bowl. This is a bad idea. Using the knife in this manner quickly leads to a dull knife edge. If you want to do this, make sure you flip the knife over so that the cutting edge is up before you scrape. This will preserve the edge of the knife and allow you to easily move food around.
