Avoid burning pie crusts
To avoid burning or browning a pie crust too early, put the pie in the center of the oven placed on a silver cookie sheet. It's important to use a silver colored sheet rather than a dark colored cookie sheet. The silver reflects the heat and the darker colored pan absorbs heat. It works every time! I use to use a dark cookie sheet and cover my pie with alumin foil after 15 minutes of baking but I no longer have to do that with the silver light colored cookie sheet. I don't have to cover it at all.
