Prevent your cheescake from cracking

If you get cracking in your cheesecakes, this is caused by dryness during the baking process. If this happens, put some water in an oven-safe container (such as a baking dish) and place it on the rake under your cheesecake while it is baking. The water will evaporate and provide a humid baking environment, which will result in a beautiful, crack-free cheesecake.
