Refreshing crytsallized honey

If you have honey that has crystallized, don't throw it out. Put the honey in a heat-safe container like a pyrex container, and put the container into gently boiling water. The heat from the water will melt the crystals and you'll have honey that's as good as new.

You can also use the microwave to heat the honey, but I think the water works better since you get more even heating

This works really well. I was even able to do this when it was in a plastic container. I just keep the water temperature just below boiling.

I have always just popped it in the microwave in the original plastic or glass container (no foil in seal or metal cap, obviously), and nuked it on low (i.e. 30% power for 15 - 20 sec). you don't want to boil it, just get it to a true liquid consistency. shake it up and once it comes back to normal room temperature viscosity, no more crystals!!
