Tip for Italian dishes with cheese mixtures
This one comes from my Grandma...
When making an Italian dish that calls for a mixture of soft cheeses (like the cheese mix you find in Lasagna, stuffed shells, or Manicotti), you can it healthier without compromising the taste by cutting back on some of the cheese and adding in Tofu.
I know it sounds weird, but it really works. You get the extra firm Tofu and crumble it into very small pieces using a fork. You then add this to your cheese mixture. You can very the ratios so that you get it to where you don't notice any change in taste. Doing this reduces the fat and increases the protein in the dish.
