Keep cheesecake from cracking

Here are some tips to keep you cheesecake from cracking when you cook it.

- Make sure your oven is the correct temperature and they you don't over cook the cheesecake. A cheesecake that is cooked for too long or at too high a temperature is far more likely to crack. If you are following the recipe and it is still cracking, try lowering the temperature by 25F.

- Do not over mix your ingredients. When you mix the cream cheese and sugar, just mix to the point of removing all the lumps and no further. When you add the eggs only mix them enough to blend them into the mix.
