Whipping egg whites
1 - Make absolutely sure that there are no yolks in the whites.
2 - Add a pinch of salt. This will help the egg whites whip up quicker.
3 - The egg whites will whip up better if they are at room temperature. Remove the eggs from the refrigerator several hours before they are to be whipped.
4 - The bowl and the beaters should be clean. Any impurities will result in egg whites which don't whip up as well.
