Quote levels in Apple mail

The mail application in Apple mail allows you to manually adjust the quote level when replying to emails. To increase the quote level, hold down the Command key and press the apostrophe (') key. Keeping pressing the apostrophe key and you'll keep increasing the quote level. To reduce the quote level, hold down the Command and Option keys and then press apostrophe.
