Testing coffee beans for freshness

From the Cooks Illustrated magazine (http://cooksillustrated.com/), here's an easy way to test coffee beans to see if they are fresh. Take 1/2 cup of coffee beans and put them in a zip-lock sandwich back. Force all the air out of the bag, seal it up, and let it sit overnight.

If the beans are fresh, the bag will have air in it in the morning due to off-gassing of the beans that happens when they are fresh. If the still has no air in it, the beans are not fresh.
