Get old Dock menus in Snow Leopard
Prior to Snow Leopard if you clicked and held on an icon in the Dock you would get a menu with a bunch of options which varied dependent on the application. With Snow Leopard this behavior has changed. Now when you click and hold on a Dock icon you get the Expose look at the application windows.
If you want the old behavior back, it's still there. To get it you need to either right-click on the icon in the Dock, or hold down Control when you click. The menus that are shown have a new look, but they contain the old functionality.

defaults write com.apple.Dock show-expose-menus -bool no;
then Killall Dock and you are all set..
