Ripening tomatoes quicker

If you need to ripen a tomato, and you want to speed the process along, put the tomato in a bowl with an apple and cover the bowl. Apples give off ethylene gas and this will speed up the ripening of the tomato.

If you have a tomato that is overripe and is too mushy to use, you can firm the tomato up by placing it in a bowl of cold saltwater and letting it sit for several hours (or overnight if you can wait that long).
